Dark Chocolate Sunflower Granola Bars


2 cups
cashew butter
1 1/2 cups
raw honey
2 tsp
1 tsp
sea salt
5 cups
rolled oats
1/2 cups
chopped dark chocolate
1/2 cup
toasted, hulled sunflower seeds


  1. In a mixer or using a hand mixer, mix warm (not hot) honey with cashew butter, vanilla, and sea salt until fully incorporated
  2. Gently fold oats, chocolate and sunflower seeds in to honey/cashew mix until ingredients are evenly distributed
  3. On a parchment lined sheet tray (3/4" deep or deeper) spread the granola mix into a thin layer and top with an additional sheet of parchment
  4. With a measuring cup, gently press parchment to condense, smooth, and even the layer of granola on the tray
  5. Refrigerate 1-2 hours
  6. Remove granola bars and peel off parchment. cut into 3"x2" rectangles. Store in a cool, dry place or in a sealed container in your refrigerator
