Cherry Tomatoes, halved
Red and Green Bell Pepper, diced
Cucumber, peeled and diced
- Mix oil and vinegar
- Mix all other ingredients but arugula, salt, and pepper in a large bowl
- Pour Oil and Vinegar over couscous salad, mix and season with salt and pepper
- When ready to serve, mix in fresh arugula at the last minute. Mixing it in too early will cause it to wilt
- This is a fresh, very acidic salad. It will turn bad after a few hours. Do not make ahead of time.
