Cous Cous Salad


1 cup
Cherry Tomatoes, halved
1 cup
Red and Green Bell Pepper, diced
1/2 cup
Cucumber, peeled and diced


  1. Mix oil and vinegar
  2. Mix all other ingredients but arugula, salt, and pepper in a large bowl
  3. Pour Oil and Vinegar over couscous salad, mix and season with salt and pepper
  4. When ready to serve, mix in fresh arugula at the last minute. Mixing it in too early will cause it to wilt
  5. This is a fresh, very acidic salad. It will turn bad after a few hours. Do not make ahead of time.
