Chili Lime Popcorn


3 cups
coconut oil
6 1/4 cups
popcorn kernels
2 lb
clarified butter
5 ea
zest of lime, fine grated, no pith
1 cup
chili flakes


  1. In a bain marie or saucepot, add lime zest and chili flakes to warmed clarified butter
  2. Allow to steep for 30 minutes
  3. In a popcorn popping machine or dutch oven, melt coconut oil and add corn kernels to pop
  4. In a large metal mixing bowl, slowly add butter to popcorn while tossing popcorn
  5. Squeeze juice from limes over popcorn and add salt and mix further until evenly distributed
  6. Top with lime zest and sea salt to taste
